Here is a lower-carb, healthier recipe to satisfy any chocolate craving. Warning: you should be a fan of dark chocolate before you eat these. I gave one to a friend who is not a dark chocolate fan, and when she took a bite, by the look on her face you’d think she had been poisoned. But I think they are heavenly, and remind me of peanut-butter cups!
½ cup sugar free peanut butter (I use Smucker’s)
2-3 tablespoons full fat cream cheese
2 tablespoons butter
Honey (2-3 tablespoons or less—the object is to use as little sweetener as possible)
Cocoa (about ¼ cup, depending on taste. I use the dark Dutch processed chocolate)
Put butter and cream cheese in bowl and microwave until the butter is almost melted. Mix this with peanut butter and honey. Add cocoa. Stir well. Form into little balls and refrigerate until firm. Store in refrigerator.
